Vers 1900, fait nouveau au Japon, tout le monde peut manger de la viande librement et ouvertement, cela devient même chic. Le premier restaurant servant du poulet ouvre à Kyoto vers 1880, et vers 1900 les yakitoris (poulet grillé en brochettes) les teriyaki et les sukiyaki sont à la mode.

C'est vers 1920 que la ménagère a besoin d'un nouveau couteau pour la découpe de la viande. Le fait est que sa mère n'a jamais eu une telle chose. Et les couteaux sont très chers. L'idée est donc née de fabriquer un couteau occidental, qui pouvait tout couper.


Le couteau mis en vente est un mariage étrange d'un couteau de chef (gyuto) et d'un couteau nakiri. Ses créateurs pensaient que cette forme serait idéale pour une femme qui avait grandi avec un nakiri, tout en ajoutant un double biseau courbé et pointu comme dans les couteaux occidentaux.  Il devait être efficace pour couper la viande ainsi que les légumes. Pour les poissons, le couteau deba régnait encore, même si souvent le poisson était acheté déjà coupé dans les poissonneries.

Ce nouveau couteau portait deux noms principaux: Santoku et Bunkabocho. "Santoku" fait référence aux trois vertus bouddhistes, utilisées pour le marketing: "ce couteau est économe, japonais et aussi intelligent qu'un occidental !"

 

L'achat d'un Santoku

 

La plupart des couteliers d'aujourd'hui offrent un Santoku ou un "couteau asiatique de chef". La longueur doit être comprise entre 15 et 19 cm. En supposant que l'acheteur cherche un couteau pour un cuisinier occasionnel, un couteau qui ne causera pas de problèmes et qui demandera d'effort, les caractéristiques idéales seraient: léger, pointe dure, facile à aiguiser et un bon prix.

Poids: un Santoku ne devrait pas peser autant qu'un couteau occidental de la même longueur. Il devra être léger et agréable dans la main.

Lame: un couteau comme celui-ci devra rester irréprochable entre deux affûtages. Un bon alliage d'acier inoxydable est le meilleur choix. Evitez des lames avec un revêtement "Damas".

Bon Prix: au Japon, les couteaux avec les bonnes caractéristiques se trouvent à partir de 40 Euros. En Europe et aux Etats-Unis, un prix idéal serait 60 Euros.

Built in 1896 as the home of Prince Roland Bonaparte - Napoleon Bonaparte's grandnephew - Shangri-La Hotel, Paris is situated in the elegant 16th arrondissement of Paris.

Rooms have fantastics views, but the most amazing view is from "Shangri-La suite" in the penthouse, with a private terrace.

I really liked the "daisy" ceiling lamp and the tabs, in Bernardaud china and white gold.
